Description:
It is a kind of white granular powder, odorless, and taste bitter. Easy to absorb moisture.
When it is heated to 160 ℃, it can decomposed into CaCo3 and Acetone. Calcium Acetate can be
soluble in water and slightly soluble in ethanol.
Applications:
Calcium Acetate is used in a wide variety of different applications. Calcium Acetate is an
effective growth inhibitor of certain bacteria. It is widely employed in bread to prevent
rope formation thus extending the shelf life of the product. High moisture content of bread
encourages the growth of bacteria causing rope. These bacteria are heat resistant and
survive at temperatures attained during the backing process. This means that conditions
conducive to rope development, adequate measures must be taken to prevent rope formation.
Calcium Acetate is an effective anti-rope agent and does not affect the fermentation
process, baking results or taste of the bread. Concentration levels of 0.2-0.5% based on the
amount of flour is recommended.
1. In kidney disease, blood levels of phosphate may rise (called hyperphosphatemia) leading
to bone problems. Calcium Acetate binds phosphate in the diet to lower blood phosphate
levels. Side effects of this treatment include upset stomach.
2. Calcium Acetate is used as a food additive, as a stabilizer, buffer and sequestrant,
mainly in candy products. It also neutralizes fluoride in water.
3. Because it is inexpensive, Calcium Acetate was once a common starting material for the
synthesis of acetone before the development of the cumene process.
4. A saturated solution of Calcium Acetate in alcohol forms a semisolid, flammable gel forms
that is much like "canned heat" products such as Sterno.
5. Chemistry teachers often prepare "California Snowballs", a mixture of Calcium
Acetate solution and ethanol. The resulting gel is whitish in color, and can be formed to
resemble a snowball.
